What’s in your Veggie Box (45A)

Vegetables this week include: spring onions, carrots, potatoes, kale, broad beans and broccoli for small and medium boxes, plus in the large box snow peas, asparagus and wombok. Fruit will be strawberries, mandarins and apples. In the small and regular boxes: spring onions – Lately I’ve been enjoying my spring onions pan fried with broad beans and served with some scrumptious scrambled eggs on toast, but they are also exceptionally delicious in Rach’s spring risotto – don’t forget to add in some kale, broad beans and asparagus! dutch carrots –  After realising we had an excess of carrots in the fridge the other day, we decided it was a perfect time to cook up a tasty carrot and coriander soup with cumin and orange. Sebago potatoes – For a delightful dinner use your potatoes, broccoli, kale, spring onions and asparagus to make Amy’s amazing green vegetable and lentil cottage pie. kale – Whether you prefer to bake them in the oven or fry them, these kale and spring onion bhajis are a perfect starter to serve if you’ve got some friends popping over for dinner. broad beans – A glorious spring special, broad beans are an exciting time – shelled, podded or double podded, however you prefer to eat them, try making this broad bean bruschetta with goat’s cheese and spring onion. broccoli – Hooray for more broccoli – a wonderful, abundant, reliable crop! For a scrumptious lunch make this beautiful grilled broccoli with avocado and sesame salad. In the large boxes: snow peas – Snow peas are an wonderful addition to a stir fry, but they also have a beautiful sweetness and crunchy texture raw in a salad. Try this recipe for snapper with ginger sauce and a wombok and snow pea slaw. asparagus – We may be getting what we call ‘wild asparagus’ in our boxes this week  – which pretty much means that all the asparagus spears are funky shapes and sizes and absolutely perfect for popping on a mouthwatering asparagus, prosciutto and goat’s cheese pizza. wombok – If you’re yet to use your pumpkin from last week, it’s the perfect time to try Amy’s wombok salad with honey soy glazed pumpkin. In the fruit boxes: strawberries – We’re hoping the strawberry weather is looking a bit better this week – sourcing local, organically strawberries has been a tricky find, but between Rach planting lots of strawberries at the farm this year and also chatting to other farmers, we are crossing all our fingers and toes that these quintessential summer favourites will be ripe enough to put in our boxes this week! If you have some dark chocolate lying around the house, chocolate dipped strawberries is always a good idea. mandarins – While we patiently wait for all the delightful summer fruits coming our way in the next few months, our dependable juicy citrus has been a favourite in our house for putting in salads (perfect with wombok, snow peas and broad beans this week!). fuji apples – Sweet, crunchy goodness – make a simple apple tart or enjoy them as they are!
