What’s in your Veggie Box (50B)

Christmas reminder: Just a little reminder that we take a few weeks off veggie boxes after our custom Christmas boxes. We know many of you are heading away, and to be honest, we are in desperate need of a break too! Details and dates can be found here.

Vegetables this week include: zucchini, cauliflower, spinach, onions,
broad beans and broccolini for small and medium boxes, plus in the large box sweet potato, potatoes and lettuce. Fruit will be plums, strawberries and oranges.

In the small and regular boxes:

zucchini – Such a wondrously versatile vegetable, shave zucchini slices into lasagne layers, spiralize them into a lovely salad or make these tasty zucchini, sweet potato and haloumi fritters.

cauliflower – Amy’s cheesy cauliflower mash is a real treat, served with some oven baked salmon and a salad.

spinach  – For a colourful burst of flavour, try this sweet potato, chickpea and spinach curry.

brown onions – These onions have been recently harvested – which means that they will have a fresh, mild flavour perfect raw in salads. If you want to store them for longer you can hang them up to dry out and cure!

broad beans – This is our last harvest of the abundant spring broad beans, the pods have grown big and tasty and would be superb in this recipe for baked sweet potato with broad beans, labne and rye crumbs.

broccolini – This simple recipe for broccolini with sweet tahini dressing is a perfect side dish for your weeknight meal.

In the large boxes:

sweet potatoes – These fragant turmeric, spinach and sweet potato fritters are a splendid appetizer to share with friends at a dinner party!

potatoes – these are new season dutch cream potatoes. Their rich, buttery taste mean they’re perfect in a mash, but they also taste delicious roasted, boiled or steamed.

lettuce – These buttery, fresh lettuces are delightful in a salad with some spinach, brown onions, broad beans and a lemon juice, balsamic and olive oil dressing.

In the fruit boxes:

oranges – This week’s citrus salad combo – lettuce, orange, broad beans, spinach and pine nuts.

cherries– We know- there’s been lots of cherries, but they’re only available 6 weeks a year, so we overload while we can! If you’re sick of eating them plain (is that possible?) whip up some easy pancakes and serve them with some beautiful sweet cherries!

plums –If we get too much more rain then our first pick of early season plums will have to wait til next week. So cross your fingers for sunshine folks!
