What’s in your Veggie Box (51A)

Vegetables this week include: dutch carrots, broccoli, beetroot, garlic,
cabbage and leeks for small and medium boxes, plus in the large box rhubarb, watercress and radish. Fruit will be plums, apples and mixed berries.

In the small and regular boxes:

dutch carrots – For a beautiful combination of colours and sweet flavours, roast your carrots, beets and honey and thyme in the oven until all the juices are oozing and it smells divine!

broccoli – Make a quick and easy stir fry with your broccoli, carrots, green cabbage and leeks, with ginger, garlic, soy sauce, oyster sauce, sesame oil and seeds and serve with some soba noodles.

beetroot – This beetroot salad with lentils and broccoli is a highly nutritious and tasty lunch or dinner.

garlic – Roast the entire bulb in the oven with your veggies to get a dreamy caramelised garlic. Someone also suggested to me the other day to experiment with smoked garlic – definitely worth trying!

green cabbage – Now that the days are warming up, it’s the perfect weather for making lots of refreshing salads for lunch – cut your cabbage into ribbons with beetroot and carrots, chunks of avocado and a lemony dressing.

leeks – With such a fragrant flavour and silky caramelised texture when sautéed, leeks are a perfect addition to risottos, quiche or even on a cheesy toastie for lunch!

In the large boxes:

rhubarb – Amy’s rhubarb caramel cake is an absolute dream! The best thing about rhubarb is that it’s delicious in both savoury and sweet dishes so save some for dinner and the rest for dessert.

watercress – A refreshing, nutrient rich and satisfyingly peppery leafy green, best enjoyed fresh (though you can incorporate it in any cooked meal too) in a beautiful salad like this burrata with roast beets, plums, fennel (substitute with green cabbage) and watercress.

radish – Another peppery delight, radishes are a welcome addition in salads, pasta, eaten with a big cooked breakfast with eggs, hash browns and greens, or these avocado and radish toasts with watercress.

In the fruit boxes:

plums – We have been looking forward to plum season all year, and these sweet, juicy, sticky delights did not disappoint last week! Little Kingsley is our in house fruit taste-tester and connoisseur – a role which he takes very seriously. 6 plums later and he did confirm that they are, in fact, very delicious.

apples –  If you’re getting a large veggie box this week, try stewing your apples with some rhubarb – I love to leave them simmering with some orange juice, bay leaves, cloves, a cinnamon stick, star anise, and a dash of red wine vinegar. Serve it with some yoghurt and muesli!

mixed berries – These sweet jewels were such a treat a few weeks ago. Depending on what’s currently ripe in the paddocks these mixed berries are likely to be a combination of raspberries, blackberries, youngberries and marionberries, and they are all berry berry delicious!
