What’s in your Veggie Box (52B)

Vegetables this week include: broccoli, salad mix, zucchini, potatoes, sweet potatoes, and red onions for small and medium boxes, plus in the large box wombok, carrots and mushrooms. Fruit will be oranges, blueberries and cherries.

In the small and regular boxes:

broccoli – Roast it in the oven with some sesame oil and garlic and add it to a salad with a creamy tahini dressing, leafy green, sliced almonds and red onion.

salad mix – As usual, make sure you remove your salad mix from the paper bag it comes in for storage in the fridge as it can remove the moisture from the leafy greens – an airtight container or reusable plastic bag is ideal!

zucchini – This simple, refreshing zucchini carpaccio is perfect as an entrée or a side!

dutch cream potatoes  – If you’re a stickler for a traditional Christmas dinner, enjoy some delicious crispy tatties! Though for something a little more summery make a big potato salad with some diced red onion and a creamy dressing.

sweet potatoes – Make these thinly sliced, artistically presented crispy roasted rosemary sweet potatoes for a scrumptious addition to the table.

red onions – These are newly harvested red onions, and will come in bunches! You can leave them to cure, or enjoy them fresh with their fragrant flavour in salads or scattered in a tasty burrito.

In the large boxes:

wombok – Wombok has such a delicate, refreshing flavour and is perfect in Amy’s wombok salad with honey soy glazed pumpkin – substitute pumpkin with some beautiful sweet potatoes!

dutch carrots –  For a simple side dish to make this Christmas, roast up your carrots with honey, orange juice, olive oil and thyme in the oven until tender and caramelised.

gourmet mushrooms – We’ll be getting some more shiitake and oyster mushy mix this week, perfect for making yourself a big hearty breakfast – tear up the bigger mushrooms into pieces and pan fry them all with butter, your favourite herbs, and some garlic and serve with some poached eggs on toast.

In the fruit boxes:

oranges – This will be our last week of citrus until next season, but never fear as we are in for a real treat this season with berries, cherries, stonefruit and hopefully in the New Year lots of delicious figs!

blueberries – Our first blueberries of the season is truly exciting – gobble them up for breakfast with a big pot of tea!

cherries – Without a doubt, one of the most festive Christmas decorations anyone can have is a big bowl of glistening cherries on the table! Wishing you all a safe and happy holidays!
