What’s in your Veggie Box (5A)

Vegetables this week include: carrots, beans, kale, cauliflower, red onions, bunching broccoli for small and medium boxes, plus in the large boxes capsicum, beetroot and corn. Fruit will be blueberries, stonefruit and apples.

In the small and regular boxes:

dutch carrots – Try this roasted carrot, kale and quinoa bowl for a super nutritious lunch or dinner!

beans – We’ll be getting an exciting mix or purple and green beans this week – make the most of the colourful box by making a beautiful salad with some blanched beans, massaged kale, roasted beets and grilled corn!

kale – Enjoy all the nutty, smoky flavours of this pearl barley, kale and goats cheese dish, simple but sophisticated!

cauliflower – You can make so many delicious meals with a cauli, from roasting it whole in the oven with oil and spices, to these amazing cauliflower tacos with pickled red onions.

red onions – Dice them up and add to salads, bruschetta, a tuna mayo sarnie and pretty much anything else you can think of!

bunching broccoli – For a quick easy stir-fry, cook up some carrots, beans, kale, bunching broccoli and tofu with some garlic, ginger, sesame oil, soy sauce and oyster sauce, and serve with some steaming wild rice or soba noodles.

In the large boxes:

capsicum – It’s still too early in the season for red capsicum, so for now these are still green ones – with a slightly more bitter flavour and a good crunchy texture they are scrumptious on pizza or stuffed with cheese or rice and roasted in the oven.

beetroot – For the ultimate combination of carbs and colour, cook this impressive beetroot and basil orzo traybake.

corn – Grill them on the barbie, or serve up a mouthwatering brunch with avo, poached eggs, leafy greens and these corn and onion fritters.

In the fruit boxes:

blueberries – We’ve been so fortunate to get an abundance of blueberries over the last few weeks, and hopefully we can enjoy them for a few more weeks yet!

stonefruit – We’re still working on what local, organic stonefruit we can get our hands on this week – hopefully some delicious plums or peaches, stay tuned!

apples – The local organic apples that we’re currently getting are new season Gravenstein apples – perfect for cooking with, though deliciously crisp when eaten fresh too.
