What’s in your Veggie Box (6B)

Vegetable this week include: garlic, potatoes, tomatoes, capsicum, broccoli and corn for small and medium boxes, plus in the large box sweet potato, zucchini and salad mix. Fruit will be raspberries, nectarines and apples.

In the small and regular boxes:

garlic – Rub some garlic cloves all over some grilled bread and make a delicious bruschetta with tomato, red onion, olive oil and a balsamic glaze!

potatoes – Make a potato rosti to accompany a tasty brunch with fried eggs, grilled tomatoes and leafy greens!

tomatoes – Try Amy’s magnificently flavoursome tomato and caramelised onion tart and serve with a simple side salad of leafy greens and a lemon and balsamic dressing.

capsicum – It might be summer, but the weather is never too hot to cook a delicious curry – try this aloo capsicum curry with potato and tomato, and serve with some naan and rice.

broccoli – This gourmet broccoli salad filled with scrumptious toasted nuts and a tangy dressing is a perfect lunch or dinner this week!

corn – Another wonderful recipe from Amy is this refreshing and tasty toasted corn and potato salad – she recommends that you can add in as many green vegetables or proteins as you like for a balanced and nutritious meal!

In the large boxes:

sweet potato – For a quick and easy but equally delicious dinner, put together these funky sweet potato, zucchini and tomato tostadas.

zucchini – A friend of mine has developed a bit of a specialty dish which I now refer to as the Shaz-kebab (her name is Sharon), as every time we go over for dinner she makes them and they are my absolute favourite – basically she pops chunks of zucchini, capsicum, mushroom, broccoli and some haloumi on a skewer and coats it in a marinade of olive oil mixed with greek seasoning (lots of dried herbs and spices). She then BBQ’s them for a couple of minutes until they are beautifully chargrilled and within minutes people have flocked to the BBQ and devoured them all. Enjoy!

salad mix – As always, please remember to take your salad mix out of its paper bag and into an airtight or reusable plastic bag for the fridge (or soak the leaves in cold water if they need to perk up a bit). We get our salad mix super fresh and made up with lots of beautiful seasonal leaves and flowers, and store it in our farm fridge until it reaches you, but on hot days the leaves can need a little TLC if left out of the fridge for too long.

In the fruit boxes:

raspberries – The raspberry plants have had a few weeks off to have some quality R&R and are finally ready to pick again! If it’s not too rainy and stormy over the weekend (fingers crossed for all fruit) we should be in luck for some sweet, delicious berries.

nectarines – Depending on the quantity of nectarines we can get, we may combine them with another stonefruit or berries for you this week. Hopefully we all get to try a tasty grilled nectarine salad with leafy greens and feta!

apples (gravenstein) – Not too sweet with a nice crisp texture, these apples are ideal for cooking with or snacking on all day long.
