What’s in your Veggie Box 14B

FRUIT UPDATE: Changes to fruit this week- Figs and apples in small plus quince in large.

Vegetable this week include: red cabbage, sweet potato, rainbow chard, gourmet mushrooms, broccolini and sweet chilli for small and medium boxes, plus in the large box baby roma tomatoes, radish and cucumber. Fruit will be pears, apples and oranges. figs and quince.

In the small and medium boxes:

red cabbage – Packed with exciting flavours and colours, this red cabbage risotto with apple, walnuts and goat’s cheese is a delicious weeknight meal.

sweet potato – This roast mushroom and sweet potato salad with sweet balsamic onions is a balanced, tasty lunch idea and my mouth is watering just looking at the photo!

rainbow chard – Who doesn’t love a cheeky chard and feta tart? Go for an adventure or picnic while the weather is still beautiful with a quiche and a salad.

gourmet mushrooms – What a treat! This yummy mix of oyster and shiitake mushrooms is perfect for a flavoursome mushroom sweet potato risotto.

broccolini – There’s a new distillery/restaurant which has opened up near my house and I cant stop raving about it to everyone I meet – they serve up this absolutely delicious dish called greens and grains which is a crunchy, smoky chargrilled leafy green and broccolini, lemony, creamy avocado filled bowl of delight which is one of the best things I’ve ever tasted (definitely worth recreating at home). Anyway, it’s my new favourite place and now possibly the only way I want to eat broccolini ever again.

sweet chilli – Similar to red capsicum, these sweet chillies are perfect in stir fries, salads, or in a scrumptious sweet chilli relish.

In the large boxes:

baby roma tomatoes – If you find you have an abundance of tomatoes at home, its a perfect time to make these gourmet semi-dried tomatoes. While they do take a long time in the oven, it’s worth the effort – they taste so much better than store bought sun-dried tomatoes and you can store them in the fridge in a jar of oil (if they last that long).

radish – Peppery and satisfyingly crunchy, make this refreshing radish, cucumber and tomato salad.

cucumber – Not the most nutritious of cucumber recipes, but sometimes you’ve got to treat yourself to something as special as a cucumber cocktail.

In the fruit boxes this week, there’ll be pears, apples and oranges.
