What’s in your Veggie Box (18B)

Update: There was a hiccup with cauliflower harvest today-sorry! They’re still in the small and large boxes, but medium are getting a surprise veg, and will get caulis in next weeks box ๐Ÿ™‚

Vegetables this week include: sweet potatoes, gourmet tomatoes, celery, bok choy, cauliflower and corn in the small and medium boxes, plus capsicum, brown onions and snow peas in the large box. Fruit will be strawberry guava, figs and feijoas.

In the small and medium boxes

Sweet Potatoes – Try one of these simple yet delicious sweet potato dish baked sweet potatoes or sweet potato hash.

Gourmet Tomatoes – Tomatoes all over the Peninsula are being pulled out of the ground as the weather cools. It’s exciting because our farmers are planting garlic, brassicas, broad beans and more to feed us through Spring. But make sure you make the most of the last few tomatoes until next Summer! An Italian treat of Tomato Bruschetta brings out the soul of the flavour, and makes for an easy, tasty snack.

Celery – A healthy yet warming bowl of Celery Soup makes for a great Autumn warmer. If you’re feeling adventurous try swapping using your sweet potato instead of the potato in the recipe (be aware the colour of your soup will no longer be a delicate and instagram worthy green). If you get a large box use up an onion too.

Bok Choy – Makes for a great stir fry by combining all of your vegetables in your veggie box in with some onion and garlic or for a simple Bok Choy dish or try this Garlic Bok Choy recipe.

Cauliflower – Here’s a new take on Cauliflower Cheese with this Pesto-Stuffed Baked Cheesy Cauliflower .

Corn – Corn on the cobb is always a family favourite so this Mexican Street Corn takes it to the next level of delish. As we get into cooler weather, corn gets harder and harder to pollinate fully- we’re still getting high quality cobs, but these too will be disappearing in the next few weeks. (If you need a break it’s easy to freeze it and save it for the months with no corn!)

In the large boxes

Capsicum – Why not mix these capsicums with your sweet corn to make Corn and Capsicum Salsa to be loaded into taco shells or soft tacos. Obviously use your fresh corn in place of canned in this recipe :), And if you don’t have any red onions left, you can soak some diced brown onion in water to mellow the flavour and use them raw

Brown Onions – Such a versatile vegetable that can be used in stews, casseroles, stir fry dishes and more.

Snow Peas – Eaten raw, steamed, or thrown in a stir-fry with your bok-choy, everybody loves snow peas! If you’re out of ideas this Snow Peas with Pine Nuts and Mint recipe is sure to please.

In the fruit boxes

This week we have a sweet combination of strawberry guava, figs and feijoas that makes the start of a great fruit salad. Try adding grapes, mandarines and pomegranate such as in this Easy Winter Fresh Fruit Salad recipe.

Strawberry Guavas are a fruit you may not have come across since our boxes last Autumn- they should be eaten freshly after picking so you won’t find them in the supermarket! If you need a refresher, or haven’t come across them before here’s a good overview
