Vegetable this week include: sweet potato, avocado, tomatoes, zucchini, capsicum and beans for small and medium boxes, plus in the large box corn, lettuce and cucumber. Fruit will be snow apples, raspberries and pears.
In the small and medium boxes:
sweet potato – The season for these delicious sweet potatoes is limited, so enjoy them while we can with this tasty recipe for avocado tomato stuffed sweet potato.
avocado – Simple but bursting with flavour, this avocado bruschetta with balsamic reduction is a wonderful lunch idea.
tomatoes – For a big bowl of goodness and colour make this combination of roasted garlic, sweet potatoes and tomatoes with chickpeas.
zucchini – A Turkish inspired recipe, this baked zucchini, pepper, onion and garlic in tomato sauce is a very versatile dish which can be substituted with a variety of veggies.
capsicum – One of my absolute favourite brunches is this delicious shakshuka with cumin, capsicum and tomato!
beans – For a super quick weeknight side dish, this lemony zucchini and green bean sauté is a perfect option!
In the large boxes:
corn – Tangy, delicious goodness, this mexican street corn salad is wonderful as a side salad or as a meal on its own!
lettuce – Make a light refreshing salad with some ripped up lettuce leaves, chargrilled corn, cherry tomatoes, avocado and a balsamic olive oil dressing.
cucumber – Both cucumber and tomatoes feature in an array of these delicious, flavoursome salads, but in particular the Cucumber salad à la Xi’an Impression looks like a beautiful dish with bold flavours!
In the fruit boxes this week, there’ll be snow apples, raspberries, and some delicious heirloom Clapp pears!
