Capsicum & Sundried Tomato Dip

This is a Thermomix favourite of ours that can easily be adapted to a Nutri-Bullet, blender or food processor. Such a rich delicious dip that can be scooped up with vegetables or crackers. Add extra olive oil and blitz further to make it into a pesto consistency and drizzle over steamed vegetables or mix in with pasta.

1 clove Garlic
150g drained Sundried Tomatoes
1 red Capsicum, roughly cut into quarters
160g Raw Cashews
40g Olive Oil
40g White Vinegar/lemon juice
2tbsp grated Parmesan Cheese


Throw all ingredients into a food processor or blender (on pulse) until desired consistency
