Vegetable this week include: pumpkin, carrots, lettuce, avocado, corn and eggplant for small and medium boxes, plus in the large box potatoes, beans and brown onions. Fruit will be apples, raspberries and some stonefruit.
In the small and medium boxes:
pumpkin – These tiny, adorable jack-be-little are a special addition to the boxes this week. As well as making great decorations for the kitchen bench, they’re also delicious roasted whole in the oven – don’t fuss over peeling them, you can eat the skin too!
dutch carrots – For a delicious, sweet, colourful dinner make this gorgeous roast carrot & avocado salad with orange & lemon dressing.
lettuce – Rip the leaves up and put through a refreshing salad or add it to sandwiches.
avocado – Hooray for more avocados! We‘ve been trying so hard to source some more for you all and luckily Deb and Shane from Yarrimbah picked some beautiful Hass for us! Make a mouthwatering cheesy avocado and corn quesadilla.
corn – Whether you prefer your corn grilled on the cob or sliced into this avocado, tomato and corn salad, it‘ll be delicious.
eggplant – I’ve been looking forward to getting eggplant in our boxes all season to make a delicious classic ratatouille for dinner!
In the large boxes:
potatoes – This eggplant potato frittata is a ideal meal which can be cooked ahead and enjoyed for breakfast, lunch or dinner!
beans – I love the anise flavours in these tarragon carrots with green beans, and it‘s also incredibly quick and simple to make!
brown onions – Onions are an essential addition to any meal, but to make them the star of the show here’s a wonderfully flavourful sticky onion tart.
In the fruit boxes this week, there’ll be raspberries, apples, and some more stonefruit.
