Vegetable this week include: pumpkin, brown onion, eggplant, broccoli, kale and carrots for small and medium boxes, plus in the large box mushrooms, tomato and garlic. Fruit will be oranges, figs and pears.
In the small and medium boxes:
pumpkin – An exciting sign that autumn has arrived is the abundance of freshly harvested pumpkins! Celebrate by making Amy’s delicious and impressive hasselback pumpkin and lentil bake.
brown onion – It’s starting getting a little chilly in the evenings at the moment so warm up with this hearty caramelised onion and sage pumpkin soup and some crusty buttered sourdough!
eggplant – Fragrant and nutritious, cook up this tasty eggplant, pumpkin and chickpea curry with some brown rice and garlic naan.
broccoli – Colourful, healthy and delicious, this salad with roasted butternut squash, broccoli, onion & kale in creamy garlic dressing is perfect for lunch or dinner.
kale – A dreamy veg combination is this caramelised onion, butternut squash, and crispy kale pizza – alongside the sage, pomegranate, honey and cheesy goodness, this pizza hits all the right notes!
carrots – This recipe for sautéed carrots, kale, onions and butternut squash is a vibrant and nutritious feast, and even better, it only uses one pan!
In the large boxes:
mushrooms – These gourmet oyster and shiitake mushies from Sam and Dave at Mushroom Forestry are always a real treat – use them to make this tasty and comforting kale and mushrooms with creamy polenta.
tomato – This week make sure to bake Amy’s beautifully flavoursome tomato and caramelised onion tart – serve hot with a side salad or cold on a picnic with friends!
garlic – Still one of my favourite garlic recipes of all time, these olive oil flatbreads with three-garlic butter are a mouthwatering treat and the grated tomatoes served on top are a must try!
In the fruit boxes this week, there’ll be apples, figs, and pears!
