In the small and regular boxes: sweet potatoes  – Cook up a big batch of sweet potato chips or make these delicious sweet potato and kimchi pancakes. tomatoes – We’ll be getting a combination of both roma and heirloom tomatoes this week, leave them to ripen up for a few days if they need it and make this divine yoghurt bowl with tomatoes, couscous and harissa. salad mix – Don’t forget to store your salad mix in a plastic bag or container to keep it fresh – the paper bag will take the moisture out of the leaves and it won’t last as long – put together a beautiful salad with tomatoes, cucumber, radish and your leafy mix, and if you have any nasturtiums, borage or calendula in the garden add a few flowers to make it extra beautiful! yellow squash/zucchini – A summery mix of both green zucchini and yellow squash, shave them into salads or make this wholesome happy soup with lemon and yellow squash. beetroot – Roast them up and add them to salads, or for a hearty dinner make some impressive beetroot ravioli. cucumber – This shirazi salad is a stunning jewelled salad originating from Iran – super refreshing, flavoursome and beautiful! In the large boxes: beans – If we’re lucky, we might be getting a combination of green, purple and yellow beans this week – perfect for a delicious bean and potato salad! leeks  – Sauté them and add to a scrumptious pasta sauce, or a tasty quiche with roasted tomato and sweet potato! radish – Try this wonderfully refreshing radish, cucumber and red onion salad with mint and orange blossom dressing, ideal for these hot summery days. In the fruit boxes: apples – Hopefully we can get hold of some delicious apples for you this week, this fruit season has been wildly unpredictable! blueberries – Only a few more weeks of blueberries to go, so we’re making sure to enjoy them while they are still abundant. raspberries – Finally the weather has calmed down a little, and the raspberry plants have had chance to recover – we’re so looking forward to indulging on them again!What's in your Veggie Box

Vegetables this week include: sweet potatoes, tomatoes, salad mix, yellow
squash/zucchini mix, beetroot and cucumber for small and medium boxes, plus in the large box beans, leeks and radish. Fruit will be apples, blueberries and raspberries.
