Gluten free duck egg quiche is a simple recipe that can be served warm or cold. Simply mix the ingredients and cook in the oven. It’s a versatile dish that will quickly become a family favourite. This recipe can be an entire meal for two adults, or will comfortably feed a family of four if served with a side dish such as salad.
Ingredients
- 1 diced onion
- 1 1/2 cups of grated tasty cheese
- 1/3 cup of gluten free self raising flour
- Salt
- 4 duck eggs
- 1 1/3 cups of milk
- Handful of mushrooms
- Half a cup of diced vegetables (frozen vegetables can be used). Shred any greens.
- 1 clove of garlic / teaspoon of garlic paste
- 1 sheet of gluten free pasty
Method
- Turn the oven on to 180C.
- Cook the onion in a saucepan, adding the mushrooms when ready, then the diced vegetables. Finally add the garlic.
- Crack the four eggs into a mixing bowl.
- Add the cheese, gluten free self raising flour, some salt and the milk into the bowl.
- Stir the bowl’s ,mixture with a fork. Make sure it’s properly mixed. The cheese will make the mixture a little lumpy.
- Use some olive oil on the sides of your baking dish. If you have a Le Creuset dish, these seem to work well. I’ve used two dishes 19cm long, 13cm wide and 4cm deep. Using two dishes means that you can make one duck egg quiche with gluten free pastry and one without.
- Line the baking dish with your gluten free pastry.
- Pour the solid mixture in to the dish/es.
- Add the liquid mixture over the top of the solid mixture, completely covering it.
- Put the dishes in the oven for approximately 45 minutes. It’s worth checking after 40 minutes. Slide a knife into the top to see if it’s cooked all the way through.
Notes on Duck Egg Quiche
Using duck eggs seems to take this recipe to the next level. While duck egg quiche tastes particularly good with the duck eggs, you can substitute the duck eggs with chicken eggs.
To make gluten free duck egg quiche cheaper, you can exchange the gluten free self raising flour with normal self raising flour, and also substitute the gluten free pastry with regular pastry. Gluten free ingredients are often considerably more expensive.
Mix and match the duck egg quiche filler. In this recipe mushrooms and vegetables have been used, but this can be altered to a cured meat (eg ham) or even fish like salmon. Using whatever food is readily available and in season is a good idea.
