What’s in your Veggie Box (13A)

Vegetable this week include: cauliflower, capsicum, celery, tomatoes, zucchini and spring onion for small and medium boxes, plus in the large box golden nugget pumpkins, garlic and lettuce. Fruit will be nashi pears, apples and figs.

Please note that we will need to deliver Friday boxes on Thursday due to the Easter Friday public holiday 🙂

In the small and medium boxes:

cauliflower – Roast it whole in the oven with some olive oil and spices or turn it into Amy’s delicious cheesy cauliflower mash.

capsicum – Filled with all the delicious veg from this week including tomatoes, spring onions, zucchini and garlic, enjoy Amy’s impressive recipe for moroccan spiced stuffed capsicums.

celery – If you’re feeling extra creative in the kitchen this week, make some of Amy’s short crust pastry recipe and fill with lots of tasty fillings like her leek and celery tart.

tomatoes – Another tart to tickle your tastebuds is this glorious tomato and caramelised onion tart, served with a light, refreshing salad or some roasted veggies.

zucchini – For a comforting and hearty meal try this baked risotto with zucchini, tomato and parmesan. Any leftovers can be used for the stuffing of the golden nugget pumpkins.

spring onions – This miso fish with spring onions and sesame seeds is a delightful combination of refreshing flavours, and a healthy balanced meal when served with some steamed veggies.

In the large boxes:

golden nugget pumpkins – Slightly larger than the jack-be-little pumpkins we had in our boxes from a few weeks ago, these gorgeous pumpkins are also perfect for stuffing with a delicious risotto mix and roasting in the oven.

garlic – With so much abundant garlic harvested last year, we’re so grateful to still have plenty to enjoy for the coming weeks – either eat your garlic, or if you have a spot in your garden now is the perfect time to plant some cloves!

lettuce – For a salad this week, rip up some lettuce leaves with tomatoes, capsicum, zucchini ribbons and spring onions and garnish with a lemony balsamic dressing.

In the fruit boxes this week, there’ll be nashi pears, apples and some juicy figs!
