Vegetable this week include: spinach, eggplant, zucchini, red onions, tomatoes and capsicum for small and medium boxes, plus in the large box sweet potato, lettuce and beans. Fruit will be kiwi, pears and apples.
In the small and medium boxes:
spinach – Nutrient rich and packed with lots of iron, this delicious 15 minutes chickpea and haloumi salad with leafy greens is a perfect meal to cook up this week.
eggplant – Summer veg is gradually coming to a finish over the next few weeks, so enjoy some tasty cumin roasted eggplant wedges while you still can.
zucchini – A classic favourite of mine is ratatouille – easy, delicious and filled with lots of veggies!
red onions – What’s not to love about a garnish of pickled red onion on everything from mouthwatering fish tacos to colourful salads.
tomatoes – There’s nothing as satisfying as biting into a fresh, ripe tomato and enjoying all its flavour – slice them up into a salad like these tomatoes with sumac onions and pine nuts.
capsicum – Amy’s moroccan spiced stuffed capsicums are a wonderful way to cook your veg and you can change up the stuffing to whatever you have in your fridge!
In the large boxes:
sweet potato – If you fancy a nice afternoon of baking try out these tasty sweet potato, nigella seed and feta muffins.
lettuce – For a lovely simple salad ripe up your lettuce leaves with pickled red onions, tomatoes, capsicum and some fresh herbs.
beans – These green beans with pistachio pesto are a brilliant combination of flavours and a great side dish to serve with dinner.
In the fruit boxes this week, there’ll be kiwi (yay!), pears and apples.
