What’s in your Veggie Box (16B)

Vegetables this week include: corn, leaks, pumpkin, beans, carrots and kale for small and medium boxes, plus the large box includes garlic, potatoes and cherry tomatoes. Fruit will be pears, feijoas and apples.

In the small and medium boxes:

Corn – If you love corn on the cob, why not spice up your life with this delicious Mexican Grilled Corn.

Leeks – Here’s an Autumn warmer of curried coconut leek soup or why not try leek and cheddar cheese tart to pop in your lunch box.

Pumpkin – A simple yet delicious pumpkin meal to try is roast pumpkin and pesto frittata or individual jewelled pearled couscous-stuffed pumpkin that look so yummy!

Carrots – For health minded people with a sweet tooth, there’s nothing better than a moist carrot cake.

Kale – Chips are a family favourite but have you tried curly kale chips. After washing and drying your kale, remove the stalks then rub olive oil into the kale with your fingers for a minute or two then add your favourite spices such as salt and pepper, curry powder, cinnamon, cummin, cajun seasoning etc and then bake for 15 minutes.

Beans

You could also bake your corn, leeks, pumpkin and carrots in the oven with some herbs and spices sprinkled on top

In the large boxes:

Potatoes – Feel free to combine your potatoes with this weeks leeks to make a heart warming vichyssoire soup now that the weather has sent a chill our way. Of course potatoes are so versatile as they can be boiled, baked, mashed or grilled such as these crash-hot potatoes.

Garlic – You can combine your garlic and kale to make an easy garlic kale.

Cherry tomatoes – those tasty bite sized summer fresh favourites are great on their own, in a salad for those rare warm autumn days or the kids may like a cheese and cherry tomato pizza.

In the fruit boxes this week there will be pears, feijoas and apples.
