Broccoli and carrot top soup

What is great about broccoli and carrot top soup is that you get a nutritious dish and zero foot wastage! A simple dish that can be thrown together in just over half an hour makes it also a great dish for evenings where you want to eat well but don’t have as much time as other days.

There is so much love that goes into producing organic fruit and vegetables. Checking for pests, and nourishing the soil so those nutrients transfer to the vegetables and into you, the consumer of the vegetable.
Carrots can take 70-80 days to grow. Broccoli can take 100-150 days to grow. All of that time to produce something so nutrient dense and delicious.
Knowing this, you definitely want to make sure every last piece is put to good use in the kitchen! So, lets get cooking with those broccoli (heads, stems and leaves) and carrot tops!

Broccoli and carrot top soup

Recipe for Broccoli and Carrot Soup

Prep time: 5 minutes
Cooking time: 30 minutes

Instruments:
Chopping board
Kitchen knife
Pot
Blender

Ingredients:

2 Broccoli large heads
Carrot Tops
1 Onion
2 Cloves Garlic
1 Stock Cube
Water
Olive oil
Salt and Pepper

Method:
1. Wash your vegetables well. Especially those carrot tops, they hide lots of grit. Roughly chop everything.
2. Put some oil, onions and garlic in the pot and sauté them until soft.
3. Add your broccoli and carrot tops to the pot. Add a stock cube and then slowly pour in your water until its visible but below your vegetables. They’ll cook down and the water will rise.
4. Boil until the broccoli is soft, around 20 mins.
5. Blend and serve. Salt and pepper to taste.

** If you want a thicker soup, you can always remove some water before blending.

If you would like to add some spices to enhance or give the soup a different twist, you do so before blending. Dressing the soup up of course is also a bunch of fun! So many great pantry and garden items to bring life to the bowl. This week, I opted for toasted pepitas and a dash of cream!
